Favorite Breakfasts for Busy Families

In early January, I wrote a post about What's for Breakfast? Right around then, people were experiencing meal fatigue and were asking for ideas as to what they could prepare for their busy and hungry families. What's for Breakfast?

Alexandria Rosa, RN is a holistic health and wellness practitioner as well as a nurse educator. She's also a Mom and like many of us is concerned about how to feed our families. Alexandria recently shared a recipe for Bacon and Egg Breakfast muffins that caught my eye. I've made versions of this with veggies or cheese...even made a sweetish version with roasted apples.

Bacon and Egg Breakfast Muffins

The make ahead piece of this recipe is a valuable timesaver for families on the go. Having prepared countless breakfast and lunches for my own family, I love anything that we can eat that is delicious and easy to prepare...especially on those busy mornings when everyone is trying to get out the door to school or work.

They'll keep in the fridge for up to 3 days and give you a breakfast you can eat on the go.
Adjust for gluten free, dairy free, or lacto-ovo vegetarian
Tip to SPICE it up- use egg beaters, egg whites, vegan cheese, any veggies, turkey bacon/sausage, or any meat sub, avocado oil spray
