Pat’s Granola Ginger Spiced Pumpkin Mousse

Pumpkin flavored desserts are especially popular in the fall. I like the idea of a pumpkin dessert, just not a pie. This pumpkin mousse pie fits the bill.

Pumpkin Mousse in a Ginger Spiced Crust

Pumpkin Mousse

Ingredients:

8 oz cream cheese (softened)

1 cup brown sugar

2 tsp pumpkin pie spice

1/2 tsp ground cinnamon

15 oz can pumpkin puree

Directions:

In a medium size bowl, whip together the cream cheese, brown sugar, and pumpkin pie spice until light and fluffy and completely blended.

Add the pumpkin puree and mix until combined.

Ginger Spiced Granola Crust

Ingredients:

1 cup Biscoff biscuits, finely crushed

1 cup Ginger Spiced Pat's Granola, crushed

1/2 cup melted butter

Combine all ingredients in a plastic bag.

Assembling:

You can make these as individual desserts or in a small pie plate.

In a small individual pie pan, press about 2-3 tablespoons of the Ginger Spiced Granola crust mix into the pan. In a larger pie plate, press most of the crust mixture into the pan making sure to cover the side of the pan.

Spoon tablespoonfuls of the pumpkin mousse into the pie pan. Sprinkle with a the crust mix. Cover lightly with plastic wrap. OR

Spoon the pumpkin mousse into dessert glasses with the granola crust mix as a topping. Refrigerate until ready to serve.
